SWEET POTATO CASSEROLE

This recipe is a light and tasty sweet potato or yam pureed dish. It differs from candied yams/sweet potatoes as those are cubed or quartered potatoes. This will become a favoite of yours I am sure.



Ingredients:

Casserole
• 1 40oz Can Princella Yams/Sweet Potatoes
• 2 Eggs
• 1 Small Can Evaporated Milk
• ¼ Cup Butter
• ½ Cup Sugar
• 1 tsp Vanilla

Topping:
• 1 Cup Brown Sugar
• ½ Cup Flour
• ½ Cup Butter
• 1 Cup Pecans, chopped

Directions:

Preheat oven to 300 degrees

Casserole:
1. In a large bowl, beat all ingredients together.
2. Place in a 9x13 casserole dish

Topping:
1. Mix all topping ingredients together
2. Sprinkle over the top of the casserole

Bake at 300 degrees for 35 minutes.
